My mom and stepdad are flying down from Iowa and Ma's friend is flying down from Cincy, so I'll be manning the oven and stove. I'm doing the basics and was wondering if anyone had a suggestion for another side to accompany this:

A few years back my brother in law started doing a cajun deep fried bird. And den Fri morning we take dem leftovers and cook up a wicked good pot of jumbalaya.

I've never fried a bird, but I do have the space now. Is it pretty good? Does the inside stay really moist? As a bonus, if I buy a fryer, I could also make fried chicken and tempura at home.

Lots and lots of booze. There will be plenty of booze, but I gotta make sure I have enough vodka for the stepdad. One drawback in Cackalacky is you can't just walk down to the liquor store and buy booze on holidays or Sundays. You can get beer and wine anywhere, but spirits can only be sold at liquor stores and by law they are closed on holidays and Sundays. The liquor code was recently amended to at least let them stay open after "sunset," which used to be the mandatory closing time.

Not all those are accidents. Anyway, the drawback is the 2 year old running around. I don't want him to look like Fred Krueger. He is pretty good about staying the hell away from my grill and smoker, though. But the guy follows me EVERYWHERE I go, so maybe I should hold off for a few years on the fryer.

You got a recipe for that? What do you do, just brine it and give it a few hours in the smoker? I presume you would want to cut the smoke halfway or something. Hickory? They got birds for 99 cents a pound right now, maybe I'll test run that on Saturday.

I always smoke turkeys, they just are amazing that way. Way better than a shitty redneck fryer. Don't go heavy on the smoke, and something more subtle with the smoke, like apple or another fruity style of wood.
Myself, I'm smoking a brisket, and making some Knödel as well. That will be in addition to the normal stuff like turkey, stuffing and that other shit.

I drove down to Darlington for the stock car race and I had a 12 pack for me and my mom. I stopped at one place off the interstate when my boy needed to piss and tried to buy beer. No dice. Stopped again a few miles from the track, no dice. Thank God the track got exempted from the county ordinance so they had beers there. I didn't realize that so many counties were dry on Sundays down here. One bonus in the county where I live is that you can buy beer at the store at any time. I don't know what the rules in Iowa are now, but it used to be that they stopped selling beer at 2 AM and didn't restart until 6 AM on weekdays and Saturdays and 8 AM on Sundays, but they have no time restrictions on packaged beer or wine here.

I guess basically just do it up the same way you would an oven, right? Except add smoke. Pretty much. With poultry you run it hotter than you would with pork or beef. So get it to 350 and early smoke, brine the bird if you can, although many birds are already brined to be fair. I also use an injector and load up marinades in the bird too.

I never stuff my turkey with stuffin. It slows down the cooking process. I cook it a casserole dish and bake it. I still call it stuffin and not dressing because I’m going to stuff my face with it.
