What is with all the hand wringing? The dude needed to be punched and you punched him. In my world, running one's mouth has consequences. I am more concerned about why he was still around afterward for a discussion concerning his continued presence in the bar. After popping him a couple of times, bodily throwing him out the door would have been the preferred choice.
Your friend with the cheap shot is a dick, though.

The elbow was definitely inexcusable. But that shit was out of my control. Knob (my buddy who threw the elbow) already hated Tex as they have been in a couple of fights before. Plus, he is also very protective of my fiance, as most of my friends from that area are.
Not really an excuse, just more information.

I was definitely thinking more along your lines that night. Taking a step back, I dont know if my actions were wrong or right. But I think they were wrong with respect to the type of person I want to be. At the same time though, I'm not exactly going to beat myself up (mentally) over this. If nothing else, Tex's karma caught up with him. I'm sure it's not the first time he has woken up with a mashed up face and a hangover from hell.

I just don't he's worth potentially getting arrested over. I had about a 0.5% chance of getting arrested. This was the in The County Seat (bar). Fights happen in there all the time, and cops are never called. Plus, even if the cops were called, I would have had lots of witnesses to testify that he attacked me and I only defended myself. When you combine that with telling them what he said, I don't think any cop would have arrested me in that situation. The fact that he attacked me is huge. If I just went up to him and punched him, then obviously I could have gone to jail. Although, even then, I would put my chances of going to jail at maybe 2-3% (just because of the location).

Given the status of the dude you punched, I'd venture to guess that your odds of being arrested/charged would directly correspond to the severity of his injuries, not merely the acts in which you engaged. Shorter version: If this douche isn't hurt bad, I doubt the local Five-O gives a fuck.
You did what you had to do and did it well.
