I made the best gawd damned bird yesterday. Just did a mostly-similar version of ole Alton B's over recipe. Fuck it was good. Decided to make gravy with it at the last minute too, was excellent.

After 64 years of trying I have finally made the perfect roast turkey yesterday. Dry brine for 48 hours, roast until 165 degrees, and let rest 1 1/2 hours before carving. Served 14 family members and all said it was the best they ever ate. My dad had to kind of whisper it off to the side because mom was in the other room. However, she asked me for the recipe as well. Merry Christmas to all of you.

Man, I need to remember to take photos.
I seared up a club steak, fuckin' au poivre yo, yesterday noon, whilst the wife and I made some homemade french fries(soak/blanch/rest/finish frying). Totally choice, and Billy could use some good images to aspire to.
